Breakfast! I cannot imagine start day without having anything for breakfast. I use to do lot of sport so I do need an energy. Not only for sport, but mainly for my little one! And of course for breastfeeding. Now, I start my day with huge mug of nursing tea and breakfast follows after Canito has his morning routine. His morning food is still milk and will be for a while 🙂 Therefore, I would like to share with you some breakfast inspirations which I will be continuously updating!

Homemade granola with Greek yogurt and fruit
Plain Greek yogurt can be good start of the day as it is full of protein and fat. It can be part of diet while trying to get rid of some kilos. I like to flavour my 100 g of Greek yogurt with homemade granola, any type of fruit (strawberries, apples, bananas) and honey.
What do you need:
100 g plain Greek yogurt
handful of fruits (strawberries, other berries), 1/2 apple, 1 banana or mixture of your favourite fruit
Bread with avocado and fried egg, with vegetable salad aside
I really like bread. However, I am missing “proper” bread or let´s say typical Czech bread. It is completely different, than you can find in other parts of western Europe or even in different continent. The difference, when compared to standard white, purely wheat bread is really obvious – it is rye flour, always in combination with wheat flour (so you can get rye – wheat bread or wheat – rye bread). Rye has quite different characteristics than wheat. It contains much less gluten which affects the stickiness, firmness and taste. In order to achieve the desired results we need to help the dough a bit and add leaven which makes dough fluffy and caused the bubbled structure of bread, gives the bread wonderful typical smell and long lasting freshness. The original Czech leaven which has been a part of the Czech culinary tradition for generations is considered a little miracle. You have to try to see the difference 🙂
So… Take pieces of bread (whichever is available), heat it up a bit, spread avocado and prepare fried eggs and place them on top of bread. I like to add parsley on top as well. This breakfast can be complete with salad with bread croutons. Chop all vegetables, and boiled egg, add sesame seeds, olive oil, Feta cheese and mix together. Fry bread pieces to get croutons and add croutons into already mix salad.

handful of baby spinach
handful of lettuce
1 boiled egg
Potatoes with tomatoes, chorizo and fried eggs
One of my most favourite breakfast! During the weekend prepared by my husband – potatoes with spicy chorizo (sometimes Mexican chorizo), tomatoes and fried egg, eaten with tortillas and avocado, from time to time with re-fried beans. It is huge breakfast, as well good when your previous evening was filled with “few” beers 🙂 It is quick and easy dish.
What do you need for preparation for 2 people:
4 bigger potatoes
bigger piece of spicy/Mexican chorizo
salt, pepper, cayenne pepper
Heat up oil in the pan and add chopped onion, fry until golden. Add spicy chorizo and let it fry a bit, afterwards chopped potatoes and wait until they are a bit softer, then add chopped tomatoes with salt, pepper and cayenne pepper. At the end add eggs on top of prepared potatoes and fry it until it is exactly, how you like your eggs to be done 🙂 You can add a bit of water to cook potatoes a bit more. Additionally, heat up tortillas, spread avocado on top, wrap it and enjoy this dish.
