I love to cook everything in one big pot. You can prepare lot of food like that, everyone can take everything or just whichever piece like. And when you do not have that much time to stand next to stove (sometimes like me when little Canito needs a nit more attention) than this dish is for you. You just prepare and cut everything what do you need and oven with time will make the magic.
This time I prepared turkey breasts with potatoes and vegetables (peppers, broccoli, onion). And what do you need:
800 g of turkey breasts
6 big potatoes
2 peppers (different colours will make the dish more attractive)
salt and pepper
sweet paprika powder, cayenne pepper, grounded cumin, chilli powder
Preheat the oven to 200 degrees firstly. Take a big pot/pan suitable for oven, add olive oil, sweet paprika powder, cayenne pepper, grounded cumin, chilli powder, salt, pepper and parsley. Mix everything together. Take turkey breasts and place them in the pot/pan. Spread the mixture of oil and spices with help of pasty brush (I use silicone one) on both sides of turkey breasts. Wash properly potatoes (or peel them if you prefer), cut them in pieces and add them in the pot/pan. At the end, chop onion (into slices), peppers and broccoli and add as well in the pot/pan. Sprinkle parsley on top. The preparation will take around 20 minutes. When is everything in the pot/pan, mix it properly together, add a bit of water and place to the preheated oven with cover. Cook around 60 minutes with lid. Afterwards, remove the lid, reduce the heat of the oven to 150 degrees and let it cook until meat and potatoes are soft.
You can serve it mayonnaise, tartare sauce, mustard or other sauce according to your taste 🙂
