Quinoa. Becoming more and more popular and fashionable, so called superfood, a complete protein and fantastic wheat-free alternative… It has became part of our menu as well. This time with pieces of chicken and radish – spinach salad aside.
What do you need:
red and white quinoa with bulgur wheat
500 g chicken breasts
salt and pepper
chilli powder, cayenne pepper, sweet paprika powder, chilli flakes
parsley and thyme
bunch of radish
handful of baby spinach
Cut chicken breasts in small pieces, put them in bowl, add salt, pepper, chilli powder, cayenne pepper, sweet paprika powder, chilli flakes and mix everything together. Heat olive oil in bigger pan and start frying chicken pieces. When fried, add bit of water and steam chicken pieces until a bit of water left in pan. I have already bought mixture of red and white quinoa with bulgur wheat and prepare it according to provided recommendations. When is quinoa ready, add it to big pan where are pieces of chicken breasts and fry it for a while with lemon juice, parsley and thyme. At the end, chop all tomatoes and add them to the pan. Mix it together and heat it up.
You can serve it with radish – spinach salad. For preparation you need to cut baby spinach and radish. Mix in bowl with olive oil, add sesame seeds and finalise with Feta cheese on top.
