One of my favourite breakfast dish. However, quite big dish at the beginning of the day, so I am not hungry for a while. But absolutely perfect after “heavy” nights with headache 🙂 And it has “proper and lazy” option. So let´s start with what do you need.
What do you need for 2 portions:
corn tortillas or Doritos (for lazy option)
300 g chicken breasts
2 garlic cloves
lactose free cheese
lactose free cream
salt and pepper
When you have everything ready, start with cooking of chicken breasts until soft and ready to be pulled. At the same time, prepare big pan with no oil and fry tomatoes with onion until vegetables are slightly burnt. When ready, blend with garlic cloves and oregano. When blended, put it back to the pan, add salt and pepper and cook it until the sauce a bit thicker. In the mean time, when the salsa is being cooked, cut corn tortillas into triangles and fry them with oil in other pan. Fried tortilla chips are basis of the dish. Or the lazy version – Doritos can be the basis of this dish. It is up to you what do you prefer 🙂 At the end pulled cooked chicken breast, grate lactose free cheese (or other one you like) and mix it with lactose free cream, and you can serve.
As I mentioned before, the basis of the dish are tortilla chips. Pulled chicken breast goes on top of tortilla chips, followed by shredded cheese with cream. Tomato salsa is poured over the top and garnished with avocado slices.
This time, I have prepared as well smoothie! Green smoothie – made from cucumber, lettuce, honey and lemon juice 🙂 Try it, it will make you happy! Cucumber is powerful detoxifier, lettuce is rich in vitamin E. Blend peeled cucumber, handful of chopped lettuce, the lemon juice from half a lemon, big spoon of honey and water.
