Me personally, I really do not like to throw away food. When I go with rubbish, I am many times shocked, how much food people just throw away! We are living in block of not many flats… But so much food waste!!! Today, we live in the time that everything is more or less available, from different parts of world – fruits, vegetables, meat, bread… simply everything what crosses your mind. But I come from the country where food shortages were in the past, where you had oranges and bananas only for Christmas, where you queued for meat or to get a new fridge, where you did not know what will be on the table for dinner.
Then, at the beginning of this year, I read about Denmark and its 25% reduction of food waste in five years (one of the leading European countries) and I told myself – that´s the spirit! Everything there started because of Russian woman – Selina Juul. It is amazing what has she done. UK and western countries have been given to us always as “dream” countries, however the reality is slightly different – in terms of food waste, UK is one of the European leading country with the biggest amount of food waste! It seems like people here do not have enough respect for the time and money spend for food and people who prepares that food.
Therefore, I will be updating what you can do with leftovers 🙂 Maybe someone will get inspired. It is nothing fancy, but easy, delicious and no need to increase the food waste.
We like to eat rice quite a lot, but often we do not finish it with the prepared dish. Many times it is just even not one portion. So it is perfect when I am alone at home with my little one. I like to prepare it mainly for breakfast with salami or pieces of vegetables. Something like “morning risotto” 🙂 And why not to have it with avocado and tortilla. Chopped tomato is as well perfect 🙂
I am sure I am not the only one who do not finish all pasta from time to time – different kind. From spaghetti, different kind of sauce, wholegrain or even noodles for soup. Why not prepare it for breakfast with eggs? 🙂 Nothing fancy at all. And if you prepare vegetable salad with black sesame seeds and Feta cheese, it tastes delicious.
Tomato sauce for spaghetti or lasagne
Always, really always, when I do lasagne mainly, I have a bit of sauce left. I cannot find the optimum amount every single time 🙂 But never mind! For pizza lovers – make your own from that tomato sauce. I usually buy pizza base and then put everything what we like on top of it. That left tomato sauce is perfect beginning. Then add salami or ham according to your taste, spinach, mushrooms, corn and lactose free cheese. To my husband I add jalapenos, capers and Cheddar cheese. How do you deal with your leftovers?
Next time, I want to try as well to prepare homemade vegetable stocks from what left while I am cooking. Hopefully, it will go well 🙂
