My memories have gone to Eindhoven with this dish, as I mentioned in previous post Fried noodles with beef and baby buk choy. Spicy fish with vegetables is favourite dish of my friend P. and reminds me good time and learning about Chinese culture and cuisine. I prepared it for the first time and I have to say, my husband really liked it… However, it was too spicy for me, so I ate only fish and vegetables without the soup 😀
What do you need:
400 g cod or other fish you like
spicy refried beans
maze (corn flour)
salt and white pepper
1 piece of Bird´s eye chilli
spicy sauce Valentina
6 garlic cloves
black sesame seeds
Firstly, cut fish into smaller pieces and put them in a bowl. Add a half of tablespoon of salt, a half of tablespoon of white pepper, 2 spoons of maze (corn flour or corn starch) and mix it properly. Put it aside and start with preparation of spicy oil.
Spicy oil is prepared from dried chillies and 2 tablespoons of pepper. Add I cup of oil into the pan, add dried chillies and pepper and heat it up. When start rolling, turn to lower heat to simmer for 20 minutes. When ready, drain the oil using a sieve. Heat up the Wok pan, add 2 spoons of spicy oil and garlic cloves. Fry them until golden, add chopped lettuce, spring onions, red peppers and Bird´s eye chilli. When cooked, remove vegetables and put them aside.
Use the Wok pan again, add spoons of spicy refried beans, 2 spoons of Valentina sauce, add 2 cups of chicken broth and bring it to boil. Afterwards, add fish fillets and cook until soft and tender. To finalise, add vegetables into the pain and let it boil for a while. In mean time, prepare rice. When rice and spicy fish ready, you can serve in one bowl sprinkled with black sesame seeds and parsley 🙂
