Tomato soup with pasta rice

I am not big fan of hot weather and when days are like that, I do not want to eat anything heavy. Summer has arrived to UK and last few days and coming ones as well, we have really lot of sun, however too hot for me and little Canito. Therefore, I have decided prepare soup – tomato soup with pasta rice.

What do you need:

2 vegetable stocks or beef broth

1 onion

1 tomato paste (250 ml)

12 pieces of allspice

8 pieces of peppers

10 pieces of clove

3 pieces of bay leave

4 spoons of brown sugar

oil

1 bag of pasta rice

Chop 1 onion into small pieces and start frying it in bigger pot. WhenΒ is onion glassy, add pieces of allspice, pepper, clove, bay leaf and fry it all together. When all spices start nicely smell in your kitchen, pour the tomato paste into the pot and fry it. After 15 minutes of frying, add water and vegetable stocks (I add 1.5 litre of water and 2 vegetable stocks). Bring to boiling and boil it for 30 minutes. To finish soup, add 4 spoon of brown sugar and let it boil for 10 more minutes. When is soup ready, you can cook pasta rice or any other “tiny pasta” suitable for soups. The soup is ready to serve with parsley on top πŸ™‚
