Cochinita pibil tacos

Weekends for me are mainly in Mexican mood. And last weekend it was not different. We had “cochinita pibil tacos” or in other words Yucatán – style shredded pork tacos with achiote. And if it does not sound still familiar, recipe is following 🙂


What do you need:

600 g boneless pork

1 achiote paste El Yucateco

2 cups of orange juice

1 cup of lime juice

2 spoons of white vinegar

dried oregano

Kosher salt

1 medium red onion

4 garlic cloves

1 bay leave

corn tortillas

Firstly combine achiote paste, lime and orange juice, white vinegar and oregano, blend it with salt until smooth. Afterwards, marinade meat with prepared blended paste and let it set for 1 hour. When ready, put it in a big pot with lid, add garlic, sliced onion, bay leave and bring it to boil. Reduce heat to medium and cook for an hour. If you have slow cooker (as I do), use it afterwards and cook until pork is tender.


When the pork is tender, shred into small pieces and put into a bowl. To serve, divide pork between heated tortillas and top with oregano, parsley or onion mixture with lemon juice on top. Easy and delicious!
