Refreshing baby Brussels sprout soup with lime

Hot day again! I am quite happy, to be honest as it is not that common in UK. But you know people… they complain if it is too rainy or if it is too hot ๐Ÿ™‚ On todayยดs menu were nutritious smoothies and soup at the end.

Fresh Brussels sprouts have many valuable nutrients, such as vitamin C and K. They may have as well unique health benefits in areas in DNA or cancer protection and it may help you with detoxification of your body ๐Ÿ™‚

What do you need:ย 

400 g of fresh baby Brussels sprouts

2 bigger potatoes

good piece of spicy chorizo

1/2 onion

1 spoon of butterย 

1.5 l of vegetable / beef broth or water with vegetable stock

2 pieces of bay leaf

4 garlic cloves

pepper and saltย 

1 limeย 

Chop 1/2 onion into small pieces, take a bigger pot and add 1 spoon of butter. Heat it up, add chopped onion, bay leaves and fry it until are the onion pieces glassy. Cut spicy chorizo into small pieces and add into the pot. While slowly frying, peel potatoes, cut them and add them into the pot. Add 1.5 liter of vegetable broth, garlic cloves and cook until potatoes are soft. In the mean time, cut baby Brussels sprouts into quarters and add them to boiling pot. Boil around 5 to 10 minutes, add salt and pepper according to your taste. And!! Do not overcook! If it happens, the taste of soup will be a bit bitter and most of the nutrients will be gone.

To finalise, you can serve with 1/2 lime per portion. It will give summer fresh taste to the soup ๐Ÿ™‚
