Courgettes. Courgettes 🙂 I have full house of courgettes. So I have decided to prepare oven – baked courgettes today. It can be as a dish by itself, served with potatoes or I prepared is as a side dish o our boring chicken with mashed potatoes 🙂
How to prepare oven baked courgettes and what do you need:
2 bigger courgettes (should be around 500 g of sliced courgette)
6 – 8 garlic cloves
lactose free cheese
basil, rosemary, thyme, parsley, pepper
Firstly wash properly courgettes and slice them into thin pieces. When ready, put the in the bowl, add basil, rosemary, thyme, parsley and pepper and mix it with spoon of olive oil. Put it aside to set. Chop onions into rings, put them in the pan and fry them in olive oil until golden. When ready, take them out and in the rest of the oil in the pan fry quickly courgettes.
In the mean time, take ceramic pan (or any other suitable for oven) and place layers of: sliced courgettes, onion ring on top, sprinkle Feta cheese and continue again with layer of courgettes and onion rings. Crush the garlic cloves and spread them. On top, grate the lactose free cheese on top and put it in the oven. Baked in pre – heated oven (150 degrees) approximately 10 minutes or until the cheese is getting brownish colour. Afterwards, only one this follows – serve and enjoy!
