Did you know that Czech Republic is a cake paradise where every region has its own specialities and it is considered as a unique gastronomic wealth? The Domažlice region, Moravian part, South Bohemian region and Wallachian special types of cakes called “frgále” with their protected designation of origin are a good example. The absolute treasure are the small wedding cakes from Slovácko, which has been baking in the region with unchanged passion for several generations.
I even think that the gastronomic wealth of all cakes has not yet reached its true awards! If everyday´s Czech cakes were baked daily in all hotels and served for breakfast, I am convinced that foreign tourists would have known something more about Czech Republic: Czech and Moravian cakes are simply unique!
There are quite bit number of recipes for different types of dough and fill variations, therefore I have chosen to prepare cake typical for region where I grew up as we have lot of apples and walnuts trees always around.
What do you need:
1 and 1/2 cup of flour
1 cup of icing sugar
125 g of butter
1/2 cup of milk
1 bag of vanilla sugar
1 spoon of baking powder
decent amount of grated apples (I would say – it depends on how much do you like them, I prefer quite a lot of apples)
1 – 2 handful of walnuts
1 handful of raisins
From the half of cup of flour, sugar and soft butter make a crumbling and put one third from that total amount aside. The rest two thirds mix with 1 cup of flour, vanilla sugar, baking powder, 1/2 cup of lukewarm milk and egg. When all ingredients together, prepare the dough. When ready, take a big pan suitable for the oven, spread butter all over the pan. Add flour into the pan and spread it all around and throw away the rest of flour. When is the pan ready, put the dough in. Apples, walnuts and raisins are going on the top, amount is depending on your taste 🙂 To finalise, spread the crumbling on top and put into the moderately preheated oven.
Probably nothing characterises the taste of Czech summer much more than a fruit cake with crumbling on top. You can go down the whole Europe, but the true delicious taste of fruits (blueberries, apples and other) with a crumb, you will not find anywhere else than there.
The ingeniously simple taste of apples and dough without any other ingredients, with a buttery crumbling on top, is a combination that does not match anything 🙂
