Strawberry – courgette chocolate cake

When our au-pair arrived, she told us that she loves sweets. But really loves! She eats a lot. Therefore, I decided to bake something and I got inspired by Tasty Eats to prepare courgette chocolate cake with strawberries. So thank you! I have more or less followed original recipe, slightly adjusted based on what my kitchen offered πŸ™‚ This cake is easy and quick to prepare. However, I have to say, my oven is lately working according to some secrete code which elf has set up πŸ™‚

What did I use:

2 eggs

2 cups of brown sugarΒ 

1/2 cup oil

1 table spoon vanilla

1 cup buttermilk

1/2 cup cocoa powder

2 cups self – raising flourΒ 

2 table spoons baking soda

pinch of salt

3 cups coarsely grated courgette

1 cup sliced strawberries

 

Optional:

300 g strawberries

1 banana

250 ml lactose free creamΒ 

3 spoons Greek yogurt

1 tea spoon vanilla extract

1 spoon icing sugar

And how to do everything… πŸ™‚ I followed basically the original recipe! Start with preheating the oven to 175 degrees and prepare the cake baking form with baking paper on the bottom and spread butter on sides. Take a big bowl and whisk together eggs, sugar, oil and vanilla. Add the buttermilk and whisk again. Add cocoa powder, flour, baking soda and salt. Mix briefly and add grated courgette and cut strawberries. Mix everything properly with spoon and poor prepared dough into the baking form.

Bake around 50 minutes or until ready in the centre as it was in my case. I needed to leave it there other 40 minutes with lower temperature to finalise it and not over bake it. Afterwards, take out the cake and let it cool down. In the mean time, you can mash strawberries and serve cake with just strawberries or whipped cream with fruits. This is going to be prepared by whisking lactose free cream, Greek yogurt, sugar and vanilla extract. Whisk it approximately 10 – 15 minutes and add cut strawberries and banana. Put it to fridge so it can set down and when ready, serve with cooled cake.

  1. I’m not sure what my husband put on his courgette plants this year, but we’ve got tonnes of the bloomin’ things. As I’m sick to death of courgette soup, I might try this instead…
