Green vegetable curry with prawns and rice

A mixture of several spices is just one of three meanings of curry. The word curry is also referred to as Indian bay leaves. The last meaning of this word is used for the dish prepared with curry spice itself.

If we ask anyone about the most typical Indian spices, they will probably respond to curry. Curry is a blend of Indian spices sometimes referred to as masala. In various proportions it contains cardamom, cloves, cinnamon, curcuma, coriander, cumin or pepper. About 25 kinds of spices are used.

Types of curry mixtures

No one has the recipe for the “right” blend of curry. There are so many variations that literally can be applied: “Different Indian House, different mix of curry spices.” However, curry spices are not used only in India. People like to eat it in the rest of Asia, and is also popular with the rest of the world. Therefore, according to the most typical characters, Indian, Thai, Javanese or English curries can be found. Other variations offer African and South American cuisine. Nowadays, you can prepare your own curry mixture, however I would say it will be time consuming. Market offers many curry pastes in these days and you can find really good quality ones! And when we prepare curry at home, we mainly uses those types of curry paste.

Curry pastes

The red curry paste is one of the hottest and contains red chili peppers, lemon grass, garlic, shallot, salt, lime, galangal (a variety of ginger that is not so aromatic), cumin and coriander. It’s nothing for those who are just starting out with spiciness! πŸ™‚

Green curry paste is not as spicy as it contains fresh green chili peppers. Other ingredients are not different from red curry paste. Due to the weaker degree of spiciness, however, the tastes of the same foods develop differently, so it is definitely worthwhile to try this paste and find out which one you like more.

Yellow curry paste mainly contains yellow chili peppers and turmeric with Roman cumin. Other ingredients include shallot, garlic, lemon grass, salt, galangal, coriander, nutmeg and cinnamon. The yellow curry, thanks to curcuma and Roman cumin, more resembles Indian cuisine and is a milder version of red curry.


This time, we had green curry with vegetables and prawns served with rice. When I was pregnant and breastfeeding I even could not smell curry and i did not want it at all πŸ™‚ Little Canito played with my taste buds. However this time, I enjoyed it so much. It was idea of my husband to prepare it.

What do you need:

800 g prawns

green curry paste according to your taste

3 potatoes

1 onion

3 garlic cloves

1 pepper

4 tomatoes

handful of mushrooms

small piece of fresh ginger

black sesame seeds

2 cups of rice

vegetable oilΒ 

Preparation of curry has few principles.Β Curry dishes are basically stews with lots of delicate or spicy sauce reminiscent of delicious spicy soup. These dishes are made of vegetables or meat, combinations of spices, fresh herbs and liquids as a basis of sauce. When curry is prepared few principles are suggested:

  • never use fats other than vegetable ones
  • for making it more acidic use lemon instead of vinegar
  • fry firstly raw spices before adding onions and garlic
  • to make your curry thicker, do not use flour, add rather yogurt of coconut milk or let water to evaporate while cooking
  • cook slowly under the lid so that all aromatic substances from spices can be extracted

So, how to start. Firstly, take a big pan and cut all prepared vegetables in smaller pieces. As I did not use raw spices but paste, I started with frying of chopped vegetables – firstly potatoes, pepper and onion, afterwards tomatoes and mushrooms are added and at the end garlic. Fry it for a while and add prawns (in my case frozen prawns).


Let it cook until they start turning into pink, add water and cover the pan. Cook next 10 minutes and add curry paste according to your taste. In my case, 6 big spoons of paste. Cover the pan again and let it slowly cook until the paste is nicely blended in water and consistency is more like stew.Β In the mean time, take another pot, add spoon of oil, two cups of rice, fry it a bit and add 3 cups of water and let it boil until the rice is soft.


When the curry and rice is ready, you are ready to serve with sprinkled black sesame seed on top and enjoy amazing taste of green curry!

  1. Thank you for giving all the tips on curry, very useful. I love curry. As a matter of fact, I made one today! Living with food allergies / intolerances can make it difficult for someone to find the right blend. You have to read the full list of ingredients that compose it. Thank goodness there are many different mixes!
