Pasta salad à la rice with basil – spinach pesto, sun-dried tomatoes and Feta cheese

This time, I have decided to have something light for dinner. And as I have fresh basil at home, why not something with basil – spinach pesto? 🙂

Basil is most often associated with tomato flavor. This plant has, like most herbs, a very versatile use in the kitchen. It will add a touch of Mediterranean cuisine to your dish. Basil helps to calm down your nervous system, improves digestion, increases appetite, and last but not least, acts as a perfect aphrodisiac. Basil also gives you vitamin C and a variety of minerals.

There is plenty ways how to use this amazing herb! However, do not forget… Basil’s essences are very fine, volatile substances. The plant should not be dried at higher temperatures than thirty-five degrees Celsius. And it must also not be cooked. When preparing cooked meals, it is added to the meal at the end. After boiling, dry or fresh is mixed into the mixture. If we cook it, the majority of essences will run out.

What do you need:

1 pack of pasta à la rice (400 – 500 g)

handful of fresh basil

handful of baby spinach for pesto

handful of baby spinach for pasta

6 spoons olive oil 

1 spoon walnuts

2 garlic cloves 

small piece of Blue cheese

150 g sun-dried tomatoes

Feta cheese / Parmesan cheese

Start with preparation of pasta. Take a big pot, add water with salt and let it boil and afterwards add the bag of pasta and cook until ready. In the mean time, start with pesto preparation. You will need handful of fresh basil leaves, handful of baby spinach leaves, 6 spoons of olive oil, small piece of Blue cheese (the amount depends on your taste), spoon of walnuts and 2 garlic cloves. Put all ingredients into blender and blend it properly. When is you pasta ready and drained, put it into big bowl and add prepared pesto. To finalize this salad, add sun-dried tomatoes and add chopped the rest of baby spinach leaves, mix it properly and you can serve it with sprinkled Feta cheese on top and cut fresh tomatoes aside. The salad is very quick, easy and delicious. If you make more pesto, you can keep in in glass jar in fridge and it will last long time 🙂
