Quinoa salad with steamed salmon

Tiny, bead-shaped, with a slightly bitter flavor and firm texture, quinoa may not be a household name just yet, but it is set for a future. The Incas have known it all along, for thousands of years regarding it as the ‘mother grain’ as they grew it high up in the Andes. Botanically speaking, it’s a relative of spinach, beets and chard. The part we eat is actually the seed, cooked like rice, which is why quinoa is gluten-free. However, you can even eat the leaves!

Unlike wheat or rice, quinoa is a complete protein, meaning it contains all nine of the essential amino acids, which cannot be made by the body and therefore must come from food. It has been recognized by the United Nations as a super-crop for its health benefits: packed with dietary fibre, phosphorus, magnesium and iron.

There are roughly 120 known varieties of quinoa, according to the Whole Grains Council. The most commercialized types are white, red and black quinoa. White quinoa is the most widely-available in stores. Red quinoa is more often used in meals like salads since it tends to hold its shape better after cooking. Black quinoa has an “earthier and sweeter” taste. You can also find quinoa flakes and flour. I actually used for the salad mixture of all mentioned types of quinoa – white, black and red. Delicious and quick.


What do you need for 4 people

500 g salmon

4 tomatoes

1 cucumber

1 avocado

2 handfuls lettuce

lemon juice from 1 lemon

1 cup of mixed quinoa (white, red and black)

olive oil

salt and pepper

black sesame seeds

sunflower seeds

fresh herbs – basil, mint, parsley



Take a pot, add cup quinoa, water and bring it to boil. When is quinoa getting ready, prepare salmon. I used steam cooker. It is amazing thing. I steamed salmon without any spices or herbs (I love the taste of salmon itself) for 15 minutes. In the meantime, chop all vegetables, put them into big bowl with 2 spoon of olive oil and mixture of chopped fresh herbs (basil, mint and parsley). Add salt and pepper according to your taste. At the end, take a big pan and when quinoa was ready, place it there, add chopped vegetables, black sesame seeds, sunflower seeds and mix it properly. When ready, serve in on plates with steamed salmon on top and fresh lemon juice. Easy, quick and delicious salad!
