Quesadillas! I love them 🙂 Just simple with cheese is good enough for me. However, this time, I have picked quesadilla with chicken with guacamole on top for breakfast.
What do you need for 4 quesadillas:
400 g chicken breasts
corn tortillas
1 white onion
1 red onion
olive oilÂ
chipotle powder
sweet paprika powder
grated cheese according to your taste (I used lactose free cheese for me and Cheddar cheese for my husband)
1 avocado
2 tomatoes
salt and pepperÂ
Put in the pan with oil marinated chicken in chipotle powder and sweet paprika powder together with chopped white onion. Fry pieces of chicken until soft. When are chicken pieces getting ready, make a guacamole. Cut tomatoes into small pieces and mix with mashed avocado and chopped red onion. When chicken ready, take tortilla, sprinkle grated cheese (according to your taste) on top, then add chicken pieces, sprinkle grated cheese again, cover with second tortilla and warm it up from both side in the pan. When ready (cheese nicely melted), you can serve with guacamole on top. Delicious, easy and quick breakfast!
