The literal translation is “rancher’s eggs” originating on ranches and farmhouses in Mexico. This dish has many styles and each of them is sometimes mixed and matched to better fit chefs and cultural tastes. This plate mainly consists of eggs, red chili – tomato sauce with fried tortillas. If you wanted to take this dish one step further, you could serve it with spicy refried beans, some steamed rice, papas (potatoes) and avocado/guacamole aside.
What do you need:
red chili – tomato sauce (we always have ready salsa at home – made from tomatoes, onion, garlic and chilies, recipe can be found for example here)
spicy refried beans or homemade (with recipe mentioned here)
Fry corn tortillas and afterwards, start with preparation of fried eggs. Once ready, you can serve fried tortilla with fried egg on top, refried beans and spicy tomato sauce. And we love to have avocado aside. Great breakfast for those who need to shake off from “busy” night!
