Fluffy plum cake with Chia seeds and crumbling on top

This recipe comes from cakes in Czech regions very traditional and the very first recipe I have from my grandmother. It is a variation of fluffy dough with a minimum of fat and therefore all success depends greatly on whipping and baking, which should be very short. Cake is baked just to get the golden edges, but rather pink, and the essential and conclusive indicator is that the dough is no longer raw.Β I always like to change recipes and embrace various healthy ingredients, such as Chia seeds.

What do you need:

200 g coarse flour

150 g whole wheat flour

180 g brown sugar

1 cup of coconut – almond milk

2 eggs

2 tea spoons baking powderΒ 

Β½ tea spoon soda bicarbonate

3 spoons sunflower / vegetable oil

pinch of salt

2 spoons rum

3 spoons Chia seeds

1 kg plums

1 table spoon ground cinnamon

1 tea spoon vanilla

 

What do you need for crumbling:

30 g butter

50 g sugar (I used brown sugar as well)

30 g wholegrain flour

30 g almond flour

1 tea spoon ground cinnamon

Preheat oven to 170 degrees. Take a baking tray and put baking paper inside (I prefer it as my oven is not the best one). However, you can use butter to spread it over the baking tray and coarse flour on top so over cake will not burn. Prepare as well fruit and crumbling for the cake. Take a small bowl where you can mix all ingredients for crumbling. Mix it with hand until you have small pieces.

Take bigger bowl, add two types of flour, baking powder, soda bicarbonate, ground cinnamon, Chia seeds, pinch of salt and mix everything together. In other bowl whisk eggs with brown sugar. When you have nice fluffy foam, gently mix the flour mixture, milk, vanilla, rum and vegetable oil. Mix briefly and lightly.

Poor the finished dough in the baking tray and spread evenly. Add the fruit on top and sprinkle it with a crumbling. Place the plate in a warm oven and bake for about 15 minutes until it turns pink. Because this dough contains only the minimum of fat, it is quickly dried, so bake only until it is pink so the dough is no longer raw.
