Picadillo is tradition dish for Spain and many Latin American countries, so for Mexico as well. The picadillo in Mexico is prepared with ground beef, which is mixed with vegetables and it is cooked with red salsa. You will love this combination of flavors and ingredients. The great advantage of this picadillo is that it can be used in any occasion. It can be served as entree dish with tortillas, it can also be served as main course (as a dinner in our case 😉 ). Although if a great occasion arises, garnish it with almonds and dried fruits (raisins for example); and you already have a filling for some traditional and elegant chiles en nogada.
What do you need:
500 g beef minced meat
1 cup of rice
2 potatoes
2 carrots
1 onion
2 tea spoons of chili powder
salt and pepper
oil
What do you need for salsa:
2 onions
4 tomatoes
2 garlic cloves
oregano

Firstly, peel potatoes and carrots and cut them into small pieces. When ready, take a big pan, add a spoon of oil and chopped onion. Fry it slightly, add beef minced meat and let it cook. When turning brownish, add cut potatoes and carrots. Cover the pan and let it cook. In the other pan, prepare salsa and in the last pot – prepare rice.
Preparation of salsa: fry tomatoes and onion without oil in a big pan with lid (you can let it burn a bit, it will give great taste to your salsa). Once it is ready, blend everything together with garlic, salt and pepper. Pour blended mixture in the pan again and let it boil until the salsa is thick. By the end, add oregano.
When is salsa ready, add it into the pan with meat and let it cook until potatoes are soft 🙂 To finalize, add chili powder (of course, it is optional if you are not a big fan of spicy food) and salt with pepper according to your taste. In the mean time, rice should be ready and you are ready to serve. This Mexican dinner is really quick and delicious!
