This type of cake is a type of sweet pastry that is made by baking already more than 90 years. To be honest… I remember already my grand-grandmother to prepare this delicious cake 🙂 This is a typical pastry not only in the Czech Republic, but also in Poland, Austria and southern parts of Germany (here known as Gugelhupf). In the Czech Republic, the dough is most often two-colored – marbled. In some areas, raisins, candied fruits, fresh fruits, coconut or chocolate pieces are added to the dough before baking. The cake is made in a special form that gives the typical shape of the pastry with a hole in the middle and is decorated with sprinkling with powdered sugar.
And… It is nothing better to wake up early in the morning and have slice of this delicious cake with cup of tea… or coffee, if you prefer…
What do you need:
1 cup of milk
pinch of lemon zest
2.5 cups of self – rising flour
160 g butter
2.5 cups of sugar
1 tbls baking soda
1 tbls baking powder
cacao (amount is based on your preferences)
pinch of salt
Whisk butter into the foam, add 4 egg yolks, sugar and continue with whisking approximately more 10 minutes. Of course, if you have mechanical whisker it is better than doing it manually. Mix flour with baking powder, baking soda and lemon zest. Add it into the prepared foam together with a bit of milk (which has a room temperature). At the end, whisk 4 whites with pinch of salt until the “hard snow” is done and add it to the dough. Stir gently everything together.
Preheat the oven to 180°C. To make this cake with marble pattern, you have to split the dough into two parts. Mix the first part with mashed banana and pour it into prepared form (I have silicon one so I do not need to put oil or butter to the edges of the form). Add 1 – 2 table spoons of cocoa into the second part of the dough and mix it together. I generally do not know how much of cocoa do I add. It always depends on my mood 😀 Afterwards, pour the second part into the form as well. To make a marble pattern, cross the both dough parts with spoon around the form. Put it into the preheat oven and bake approximately 50 minutes of until ready.
Let it cool for a bit afterwards and sprinkles icing sugar on top. When ready, you can cut a good slice of cake and have it with mug of tea 🙂 I always enjoy this cake in early mornings when being on holiday with my family…
