It is not that long time ago I have prepared quinoa salad with salmon. And yesterday, quick dinner again. This time it was avocado – quinoa salad with steamed cod seasoned with mixture of herbs. We love avocado at home and eat it really a lot, with almost everything and not just because it is from Mexico π Have you known that the avocado is a tree originated in South Central Mexico?
AvocadoΒ (alsoΒ alligator pear) refers to the tree’s fruit, which is botanically a large berry containing a single large seed.
What do you need for 4 people
800 g salmon
4 tomatoes
2 peppers
4 avocado
2 handfuls lettuce
lemon juice from 1 lemon
1 cup of mixed quinoa (white, red and black)
olive oil
salt and pepper
fresh herbs β basil, mint, parsley
sweet paprika powder, chiliΒ flakes, cayenne pepper, mustard seeds
Take a pot, add cup quinoa, water and bring it to boil. When is quinoa getting ready, season cod with fresh herbs (chopped basil, mind and parsley) and mixture of 1 tsp of sweet paprika powder, 1 tsp of chili flakes, 1/2 tsp of cayenne pepper and 1/2 tsp of mustard seeds. Then I used steam cooker for the cod preparation and the whole process takes about 15 minutes. It is amazing thing. In the meantime, chop all vegetables, put them into big bowl with 2 spoons of olive oil. Add salt and pepper according to your taste. At the end, take a big pan and when quinoa was ready, place it there, add chopped vegetables and mix it properly. When ready, serve in on plates with steamed cod on top and 1 avocado per person (dish). To finalize, sprinkle the cod with fresh lemon juice. Easy, quick and delicious salad!

Give it a go and let me know how do you like quinoa. No matter which recipe you pick π To be honest… At the beginning, I was not fan of quinoa. I have found my way liking it with time π But now… One of my favourite dishes π

Oh yummm Vero! We love avocado too. Larry grew up small avocado grove at the bottom of his yard. But lately they’ve gotten super expensive here! But I keep buying them–our weekly luxury! And– I didn’t know avocados were called alligator pears! That totally makes sense! Delicious post!!

Ah, really? Has he succeeded? We tried to grew up our avocado as well, however it died two times… We are doing something wrong or maybe the weather here is not good… We want to try it again. To be honest, here are not cheap as well… But we have always full house of avocados! It is our small addiction π
