Other Mexican breakfast on our plate π This time… Burrito. Mexican chorizo breakfast burritos. Well… not properly wrapped burritos, but burritos. I love mornings during the weekends, we always have really delicious breakfast, more like a lunch π Those burritos are not difficult, however you do lot of things together.
What do you need:
corn tortillas
Mexican chorizo
2 onions
chillies
4 tomatoes
2 garlic cloves
3 potatoes
3 eggs
rice
few pieces of ham
grated cheese according to your taste
olive oil
chilli powder
salt and pepperΒ
Take a bigger pan, add chopped onion with olive oil, fry it until golden, add Mexican chorizo and chopped chilli (that is optional – if you prefer non – spicy version, skip it π ). Afterwards, add peeledΒ potatoes cut into small cubes and sprinkled them with a bit of chilli powder. Fry the mixture until potatoes are soft. In other pan, scramble eggs with ham, salt and pepper. In pot prepare the rice. The last pan belongs to the salsa preparation. Four tomatoes, onion and garlic cloves and fried without oil there. When slightly burnt, everything is blended. At the end… warm up tortillas, add a bit of everything, sprinkle with grated cheese according to your taste (for us it was lactose free cheese mixed with Cheddar cheese) and add salsa. Additionally, you can add avocado (unfortunately, we did not have any! And believe me, this is not happening often π ) and tomatoes aside.

Oh Yummm! We have breakfast tacos around here– mostly eggs, avocado and cheese (maybe bacon)– but you’re making me want to try them with chorizo for a little more spice! They look super Vero!! hugs to all there!
