Green baked gnocchi

It is not that long time go when I have tried to prepare homemade gnocchi. And it was actually success. This time, I had fridge full of green vegetables and not that creative mind so I prepared all greens with gnocchi and baked them with creamy sauce.


What do you need:Β 

500 g gnocchi (or prepare homemade one with recipe which can be found here)

300 g baby spinach

300 g broccoli

300 g asparagus

2 pieces of eggplants

2 pieces of courgette

spring onions

200 g double or lactose cream

125 g grated cheese (I used mozzarella cheese this time)

1 vegetable stock


Take a big Wok pan and add all vegetables in – baby spinach leaves, cut broccoli, asparagus, eggplants and spring onions. Add cup of water with vegetable stock and cook with lid until soft. In the mean time, prepare homemade gnocchi or cook bought one πŸ™‚ While waiting for vegetables getting soft and gnocchi ready, mix grated cheese and cream together in bowl. Afterwards, put everything in baking tray and mix properly. Put in preheat oven (175 degrees) and bake it until golden on top πŸ™‚
