Chicken with baked spinach – ricotta tortellini

Last week I prepared one of the Italian pasta – tortellini, filled with spinach and ricotta. And not to have it just vegetarian, I baked them with pieces of chicken πŸ™‚ Delicious dish! Who does not love pasta?!


What do you need for tortellini

400 g of coarse flour (corn would be good as well)

100 ml water

2 eggs

butter salt

250 gΒ  baby spinach leaves

150 g ricotta



750 g chicken breasts

olive oilΒ 

sweet paprika powderΒ 

cayenne pepper

250 g double cream (or lactose free cream)

150 g grated mozzarella


Firstly, start with tortellini preparation as chicken is going to be quick. Put flour into the bowl, add egg into the middle and gradually add water. Make a dough – firstly with flat knife and later on with hands until you have stiff and soft dough, which is not sticky. Split the dough into 3 pieces and cover it with cloth and leave it set for approximately 30 minutes. In the mean time, blend spinach with ricotta together until you have a paste.

From each dough loaf prepare approximately 2 mm thick rolled dough. Using a glass, cut of the pieces for tortellini. Afterwards, add spinach – ricotta filling. You can prepare different types of fillings (I did as well bacon with mozzarellaΒ  cheese). Put the dough in half, pres the edges together, turn around the finger and press it again. When you have it ready, place tortellini on a large pot with salted boiling water and cook approximately 8 minutes. Drain them and immediately sprinkle with butter to avoid sticking.



Now you can prepare chicken breast. Cut them into smaller pieces and marinate them with sweet paprika powder and cayenne pepper. Who does not like cayenne pepper, paprika powder is good enough πŸ™‚ Take a bigger pan and start frying chicken. After couple of minutes, add glass of water, cover the pan and let it cook until soft and tender. In the mean time, preheat the oven (180 degrees) and mix grated mozzarella cheese with double cream, salt and pepper together. When ready, take a big baking pan and mix prepared tortellini with chicken pieces. Cover it with double cream and mozzarella cheese mixture and place it into the oven. Let it bake until cheese is melted πŸ™‚
