Roasted rabbit – simply and deliciously

Do you like rabbit meat? πŸ™‚ To be honest, it is not my favourite one, however from time to time with good red cabbage and dumplings… It is delicious dish. When we kids we always needed to help with everything in my grandma’s house and as well, when preparing any kind of meat… However, I did not like it and still today, I cannot do it. Those animals were kind of “friends” to me if you understand what I mean πŸ˜‰ So… see them being “killed and prepared” was torture for me. But eat them πŸ˜€ Always amazing experience. How controversial and weirdo I am πŸ™‚

So when we have rabbit it is always when my dad is around. This time, he prepared roasted rabbit with typical dumplings made from special bread called “houska” in Czech language. It is something like baguette or bun bread.

What do you need for rabbit preparation:Β 

rabbit meat (bought or fresh)Β 

1 bigger onion

4 garlic cloves

caraway seeds

saltΒ 

baconΒ 

butter

 

What do you need for red cabbage preparation:Β 

1 red onion

1 tsp sugar

saltΒ 

red cabbage

2 bay leaves

 

What do you need for dumplings:Β 

1 tsp sugar

25 g yeast

1 tsp saltΒ 

500 g flour

2 pieces of baguettes or bun bread

lukewarm milk

Start with dumplings preparation as you need to leave the dough set for a while. In a bowl mix the flour, bun bread cut into small pieces and lukewarm milk together. Add yeast, a pinch of salt, sugar and stir it again. Process the dough until it is thick. When ready, cover the bowl with dough with piece of cloth and leave for 30 – 45 minute to rise. It is good to keep it in warm place and not in cold one. Afterwards, split the dough into two pieces, make a roll and cook in salted water for 17 minutes. Afterwards, take them out of the water and pinch them with for so it does not fall (meaning that it will not get flat while cooling down). If you are not confident those kind of dumpling you can try the “cup dumplings“.

While waiting for the dough rise, start preparing the rabbit. Firstly, preheat the oven for 200 degrees. Then sprinkle caraway seeds on top, add chopped bacon, salt and put into the baking tray. Add chopped onion and crushed garlic cloves and butter to the pan. Afterwards, put the pan into the preheat oven and bake it covered for 90 minutes and rest of 30 minutes uncovered so you can create nice crust πŸ™‚

Now, your dumplings are getting ready and rabbit as well. You can prepare red cabbage. Cut the cabbage into small pieces and put it into the pan with bay leave, chopped red onion, sugar and salt. Add water just to cover the cabbage completely and bring it to boil with the lid on top of it. Stir the cabbage from time to time so it does not get burn from the bottom. When is all water gone and cabbage soft, you are ready to serve together with dumplings and roasted rabbit πŸ™‚

  1. How fun to share this with your father Vero!! The dumplings are so pretty! We haven’t had rabbit since the years we lived in Spain– I don’t think people eat it here. I’m thinking you are off on your travels by now!! Merry Christmas!! hugs!
