Frittata is sometimes called the Italian version of an omelette or Spanish tortilla or crustless quiche. Frittata can be made from whatever you have in mind and whatever you crave. I have chosen frittata for breakfast, however it can be easily eaten any time during the day ๐ย We usually have for breakfast something “bigger” and most of the time potatoes with Spanish chorizoย or something from here. This time, I was looking for something else and frittata appeared.
What do you need:ย
4 potatoes
250 g asparagus
1 onion
6 eggs
150 g grated mozzarellaย
olive oilย
Firstly, peel the potatoes and boil them in salted water. Cook them until nearly tender, add chopped asparagus and boil it for couple of minutes. Drain afterwards and put everything into the pan suitable for oven. While potatoes and asparagus are getting ready, take a pan and fry chopped onion until golden. Add onion into the pan with potatoes and asparagus and mix everything together. In the separate bowl whisk eggs with half of grated mozzarella and pour mixture into the pan with potatoes. Top with the remaining cheese and put into the preheat oven until eggs are ready and cheese golden. And… your breakfast is ready ๐ You can serve it with salad or any kind of vegetables you like – in our case tomatoes and avocados.
