Gordita or in other words “chubby” and this time it means Mexican chubby stuffed tortilla, mainly with meat, cheese or other fillings πŸ™‚ The name itself sounds funny for you who is learning Spanish (or at least for me). In Mexico, you can find many types of gorditas and they can be eaten as breakfast, lunch or dinner… any time is perfect! We had them for breakfast and I have to say – delicious!

The most I like gorditas stuffed with picadillo, chicharron (a spiced stew of pork rind which is very famous across Mexico), asado (pork filling), papas con chile (potatoes with chillies), frijoles con queso (spicy green beans with cheese). You can eat gorditas with many types of sides – guacamole, avocado, beans or different types of salsas.

Let me share with you recipe for the most famous gorditas – gorditas with chicharron πŸ™‚


What do you need:Β 

1 1/4 cups lard

1/2 cup spicy red salsaΒ 

1/2 cup grated cheese

1 tsp saltΒ 

750 g pork meat

1 onion

3 pieces of chillies

500 g corn flour masaΒ 



Firstly, it is always good to start with filling preparation. Take a big pan, add oil and heat it up. Fry chopped onion, add cut pork meat, chopped chillies and add a pinch of salt. Fry everything together couple of minutes or until the meat is nicely done. Reduce the heat afterwards and keep frying slowly.

While preparing the filling, mix in the bowl corn flour with water and mix it properly. Afterwards, beat 3/4 cup of lard with a fork until it whitens and add it into the corn mix with a pinch of salt. Stir everything together until the lard is well incorporated and the dough is made. When ready, shape 12 balls from prepared dough. Take one, flatten it and put a teaspoon of pork filling in the centre. Fold the dough in a way to cover the filling and shape it in a ball again. Flatten by pressing the ball and it is going to be a thickness of your gordita. Repeat this will all 12 balls of dough. Then you can cook all of them in stove, flipping them from time to time so it will not get burnt.




And well… you have your gorditas ready to eat! You do not need to prepare gorditas only with pork filling but with whatever you fancy! πŸ™‚ It is really delicious! I enjoyed a lot the one with picadillo, but green beans with cheese were not bad at all as well. When you have a trip to Mexico, do not forget to try them! Honestly, it is now on my top list for breakfast πŸ™‚

And we’re having our own cross cultural eating these days with our daughter-in-law and her friend from China staying with us and doing some of the cooking!!
