Hopefully, you had a great start of the new year π At the end we are back from Mexico, so it has been really tiring… Time difference with jet – lag, our little monkey at the end with antibiotics (as he has tonsillitis, ear infection and teething with molars) and trying to settle down here again. I am so tired. We handled long flight with our little one pretty well, however we waited a bit more than 7 hours in Mexico City and believe me, with little baby, not that much fun. However, the flight was great… actually, my little boy was absolutely amazing. He slept almost the whole flight (as it was the same on the way to Mexico) and I want to call myself a lucky mum π Our whole journey door to door tookΒ more than 20 hours and all of us were completely exhausted. But… we managed! And we had our New Year dinner at home. Happy and sad together… Happy being at home, together and sad because we are again alone and without family around. It was amazing to be with everyone, to see how our little one is adjusting in completely different environment and… He did his first “steps alone” there!!! And he has caught up a lot of Spanish and I can clearly see, that he understands all three languages. I am still amazed about babies abilities, they are real sponges! π
LetΒ΄s get back to our New YearΒ΄s dinner. As soon as we arrived, we bought a duck. My dad has told me that the best duck is the one, which is baked at least 16 hours. Soooo… Enough time for us to have a rest as well and let the oven do the job π
What do you need:
1 whole duck (size depends on you and how many people are going to eat, I have chosen smaller one as only two of us ate)
300 g red cabbage (fresh one or canned)
salt
ground cumin
1 tbsp oilΒ
3 bay leaves
1 tsp sugar (optional)
1 vegetable stock
1 onion
potatoes (I always cook 2 pieces per person)
Firstly, marinate the duck. And… it is really simple – just with salt and cumin. Marinate it properly, from all possible angles π As I said at the beginning, my dad has recommended me to bake the duck at least 16 hours. However, I did not do it exactly that long, but long enough!
Baking has couple of steps:Β Put marinated duck into the pot suitable for oven, ideally with lid. If you do not have a lid, aluminium foil is great.Β Firstly, bake the duck for 80 degrees for 6 hours in the oven. Afterwards, increase the oven temperature up to 120 degrees and bake it for 3 hours. After those 3 hours, check if the meat is soft and tender. If so, you can increase temperature to 180 degrees and bake covered approximately 1.5 hour and then around 35 minutes uncovered so you can get a nicely crispy parts on top.
I like duck meat with red cabbage (white is good as well) and dumplings. However this time, I was not able to make dumplings, but you can check the recipe here. I prepare it with potatoes which go well with duck and cabbage too. The red cabbage preparation is mentioned in post here.

I will agree with Sophie, since I do not like that much duck but your recipe is a must try so I will try it by using chicken!I am very glad that you and your beautiful family enjoyed Christmas with your beloved ones!Don’t be sad if they live away from you, mine family lives away from me too but I am feeling very blessed for having them in my life!

Interesting duck recipe! Over here we usually have it roasted, or braised in soy sauce, or made into soup with pickled mustard leaves and fresh tomatoes.

My dad used to prepare it and I love it. Ah yes, China! Have you been there? I have really good Chinese friend (we used to live together in the Netherlands) and ate lot of Chinese food too and duck in China. Different, but delicious ππ Lot of hugs from crazily windy UK π

Hi Vero– I was wondering if you were coming home to blustery weather!! Yep, our son lived in China for eleven years and we visited him every year! He’s married to wonderful Jodi from central China and our son-in-law is from Hong Kong. So we get our good share of Chinese food. When the kids were with us all last month Jodi and a friend visiting from China spent a day making over 200 dumplings for a dumpling feast! Well, stay snug friend.
