Banana muffins with Chia seeds

While our little one was having I decided to bake something. Quick mainly. As you never know how long his nap going to last. Mainly 30 minutes and when being lucky, a bit longer πŸ™‚ So… muffins are definitely quick sweet pleasure and mainly when are bananas going off! So do not throw them away. Banana muffins can be a healthy snack even for kids.

What do you need for approximately 10 pieces:Β 

3 – 4 bananas

1 cup self – rising flour

1 tsp baking powder

1 tsp soda bicarbonate

1/2 cup brown sugar

3 tbsp Chia seeds

2 tsp cinnamon

2 eggs

1/2 cup vegetable oilΒ

Firstly, preheat the oven to 180 degrees and prepare muffin baking tray. Mix together properly flour, baking powder, soda bicarbonate and cinnamon. In the other bowl, mash bananas, sugar, eggs and Chia seeds. Mix it properly. When done, add flour mix into the banana bowl and fill the muffin baking tray with the dough. Bake approximately 25 – 30 minutes or until done πŸ™‚

Enjoy this sweet pleasure. I have to say… in our case I guess it was a success! πŸ™‚ My little one just loves it ❀

  1. Hi Vero!! first– have to say I love love that beautiful little face– what a smile!! And the muffins looks perfect– healthy and warm. I’ve never used chia seeds in baking, cut I really like the idea! Did they make the muffins crunchy?? Happy naptime baking!! xox
