New week ahead of us after busy and grey weekend for me. However, it was not grey in our kitchen. To be honest, I really love on pot dishes. All flavors combined together, not additional dishes (as I am really practical person 😉 ) and you can pick whatever you want and how much do you want! Simply great. Therefore, I baked pork shoulder in one pot together with potatoes and vegetables this week.
What do you need:
2 kg pork shoulder
potatoes (I always go with 2 – 3 per person in case of one – pot dishes)
4 garlic cloves
2 – 3 peppers (can be different colours)
1 tbsp olive oil
handful of basil leaves
salt and pepper
The preparation itself does not take that long. Take a big baking tray and season the meat with ground cumin, crushed garlic cloves and spicy chilli powder. If you do not like chilli or even garlic, you can use only cumin, it is going to be delicious. I love combination of pork and cumin. Once you have it seasoned, put in baking tray with olive oil. Afterwards, cut onion into bigger pieces and spread it around the meat. Wash potatoes and cut them into bigger chunks and add them into the baking tray as well. At the end, cut peppers and put them into the baking tray too. Now it is done and prepared for baking. Preheat the oven to 180 degrees, cover the baking tray (I use aluminium foil as I do not have a lid) and put it into the oven. I baked it this time 4 – 5 hours and the meat was incredibly soft and tender. Afterwards, you can serve with basil dip which has become favourite in our family 🙂 Put the Greek yogurt into a bowl, add finely chopped basil leaves and add salt and pepper according to you taste.
And what has left… To enjoy this one – pot dish! 🙂
