Leftovers again. One – pot dish again. Why not 🙂 Saving food and time. This time, I had baked pork which we had over the weekend and still some pieces in the fridge. Therefore, risotto was quite good option and quick 🙂
What do you need:
1 cup of rice
baked pork or any other meat which just stayed in your fridge from previous lunch
1 – 2 carrots
handful of green peas
handful of sweet corn
handful of mushrooms
eggs (1 – 2 per person)
Take a one big pan (I took Wok), add olive oil and chopped carrots with mushrooms. Fry it until soft and tender and afterwards add rice and fry it until glassy. With 1 cup of rice, add approximately 1.5 – 2 cups of water, sweet corn and green peas. Let it boil until the rice is soft. When done, add spoon of soy sauce and chopped pork just to warm it up in the rice mixture. Take a new pan and make fried eggs separately. When ready, you can serve with avocado aside, topped with basil leaves or grated cheese.
Nothing special, nothing difficult, however delicious quick and comfort dinner!
