Good evening everyone!
Dinner time again. This time… I was thinking about my beloved Switzerland and Swiss rosti. I have never tried it before at home, so I gave it a go today. It could have been better, however… it was success as everything was gone straight away and no leftovers. When I was living there I got a Swiss cookbook from my colleges. You can prepare rosti in couple of ways and I followed recipe mentioned below π
What do you need:Β
potatoes (I usually go with 2 potatoes per person)
8 slices of bacon
1 onionΒ
butter
cheese (the best is to have Swiss cheese, but you can pick one which you like)
250 g cream
salt and pepper
eggs (1 per person)
pickles
Start with boiling of potatoes with skin. Boil them until soft and cool them. When completely cold, peel potatoes and grate them. In the mean time, finely chop the onion and put it with butter in big pan or pot. When glassy, add cut bacon and fry it until crispy (if you like it that way). Afterwards, add grated potatoes, mix it and make a potato cake in the pan. Grate cheese and mix it with cream and pour it on top of the potato cake. Cover the pan properly and let it cook approximately 30 minutes or until crispy.
Well… and you can serve it! I like it with fried egg and pickles (or pickled onions) π
Enjoy!
