Weekend is almost gone and finally, I have found a bit of time to post something. I am really busy getting ready to move. We are moving next weekend and now it is time to pack everything. And with little monkey, it is going step by step… slowly in other words. So let me introduce weekend breakfast! Scrambled chickpeas! 🙂
What do you need:
1 can of chickpeas
2 garlic cloves
salt and pepper
for salad – baby spinach, radish, olive oil and Feta cheese
Firstly, take a can of chickpea and put all of it into the bowl. Mash slightly chickpea with a bit of water from the can. Leave some bigger pieces 🙂 Afterwards, add turmeric, salt and pepper and mix it with chickpea properly. Heat up pan with oil, add finely chopped onion, then mashed chickpea, crushed garlic cloves and eggs at the end. Fry it until done and the way how you like your eggs 🙂 Serve with baby spinach – radish salad and Feta cheese on top and tortilla aside. However, you can serve with avocado, mixed greens or tomatoes.
