Turmeric risotto #3

New week, new busy week. I have started packing for moving which is going to happen over the upcoming weekend. And I cannot believe how much things do we have πŸ˜€ May of them already forgotten and I have taken it as an exercise to donate things which I am not going to use or wear. As I hate to throw away food, I rather donate thing which can still be used than throw them away too. And with being busy… cooking goes slightly aside. Therefore todayΒ΄s dinner – leftover risotto number 3, this time with turmeric and ginger.


What do you need:Β 


good size of Spanish chorizoΒ 

handful of mushrooms

1 red pepper

1 onion

mixed vegetables (broccoli, green beans, corn, carrots)



salt and pepperΒ 

cheese (according to your taste)




Some time last week we had rice… with what, I cannot remember and I have found decent amount in fridge. Add finely chopped onion into the big pan, cut chorizo and all mixed vegetables. Fry them until soft and add rice with turmeric. Fry until warm. And… serve! Delicious with cheese, tomato and pickles aside.


Easy, nothing special, 20 minutes leftover dinner! πŸ™‚

  1. Looks yummy Vero– I read an article this week that said the average home has over 300,000 items in it!! It made me want to start counting around our house– I guess if you count every paper clip… But it gives me sympathy for all the things you have to pack!! And you’re so smart to weed things out as you go. Hope it goes smoothly this weekend! hugs hugs.
