    • Moroccan couscous with slowly baked pork

      Weekend in front of us again. It feels like it takes ages to settle down and arrange everything 🙂 However, at least kitchen is arranged well so I can cook whatever house brings… and this time couscous with baked pork.

      What do you need:

      200 g couscous

      1 kg pork shoulder

      4 garlic cloves

      vegetable stock

      ground cumin

      1 tsp ground cinnamon

      lemon juice from 1/2 lemon

      olive oil

      red onion 

      400 g chickpea

      roasted pepper 

      parsley 

      mint

      radish

      Feta cheese

      Firstly, start with pork baking. I have used slow cooker and baked the pork for almost 2 days in row. Take a pork shoulder and all you need is ground cumin, olive oil and crushed garlic for seasoning. Season your meat and put it into the slow cooker together with cup of hot water and vegetable stock. Let it cook until soft and tender. You definitely do not need to bake it for 2 days, however I would leave it for example over night 🙂

      Once you have almost ready your pork, you can start with couscous preparation which is very quick and easy. Take a big pan and chop onion into bigger pieces and add it into the pan together with oil. Heat it up and let it fry until nicely glassy. In the mean time, cut pepper into smaller pieces and add it into the pan with chickpea. Add teaspoon of cumin and cinnamon and mix it properly. Let it fry until it smells nicely in your kitchen. Afterwards, add lemon juice into mix and couscous with water, mint and parsley. Let it cook until soft. At the end, mix it properly and you can serve with tender pork and chopped radish with Feta cheese aside.

      Hello my blogger friends!

      I had my family here in UK for couple of days and I did not have a bit of time to post something. Time was flying incredibly fast when she was here and now… Back to reality 🙂 During the weekend, we had a Mexican mood and talked a lot about Mexico and planning where should both families meet and Mexico is actually leading the list. And as Mexican mood was around, I prepared this amazing salsa from avocado (we love avocado at home!!!). I prepared a decent batch and used it for burrito, sandwich and even one Czech dish with rice. If you love avocado and want to try something different or have it with crisps while watching a movie – it is a great choice.

      Happy Friday my friends!

      Hopefully your week has been as good as mine. I am truly happy having a new job. However, it brings as well lot of hunger 😀 To be honest, I am just always hungry now and I yesterday I was missing vitamins, fruits. Soooo… I have tried this amazing Mexican fruit salad and it is one of the TOP I have ever had 🙂 However, my presentation was not that great as on pictures on this shared recipe. I was probably too hungry, too impatient…

      Now, I am looking forward for weekend and spending more time with my little one and keep arranging the house slowly. And… my mum has arrived to help us a bit ❤

    • Spanish Paella

      Since with have a Spanish aupair, I am looking for some Spanish dishes as well to make her feel as at home even more… When we have paella, mainly my husband cooks and I love his paella the most (here is the link for his fish paella). I am calling myself a lucky woman as he cooks so good ❤ But this time I told myself that I am going to try it as well… It was not bad, however I prefer the one my husband do 🙂

      What do you need: 

      olive oil 

      1 onion

      6 garlic cloves

      2 chicken breasts

      500 g sea food mixture (whatever you prefer)

      1 red pepper

      4 cups chicken / vegetable broth

      2 cups rice

      1 tsp saffron

      1/2 cup green peas (which I have forgotten to add)

      2 tbsp tomato puree

      salt and pepper

      parsley

      Heat oil in a big pan or pot and fry onion and crushed garlic together. Add cut chicken pieces and fry until done. When ready, add cut red pepper and season it with salt and pepper. Afterwards, add tomato puree and mix it properly. Add rice and fry it together with everything what is in the pot already. Pour in the broth (or water with stock), add mix of sea food, peas and saffron. Mix all ingredients until well combined. Bring it to boil and cook until done. Do not forget to reduce the heat so your rice will not burn from the bottom. Cook everything until soft and tender. At the end, sprinkle paella with finely chopped parsley and you can serve!

    • French potatoes

      One pot dish again. So comfortable food for busy days. We call it French potatoes, however I doubt that French would know what does that dish mean 🙂 There is couple of options in Czech Republic how you can prepare it. Original French potatoes are without salami and only with cream and cheese. This time… I prepared them with salami (as my husband likes to have something “meaty” if possible 😀

      What do you need: 

      1 kg potatoes 

      500 g soft salami or smoked pork

      10 eggs

      125 ml cream

      cheese

      salt and pepper

      Firstly, boil potatoes with skin until soft and let them cool down. When done, peel them. While potatoes cool down, boil 6 eggs and afterwards let them cool down too. In the mean time, cut soft salami or smoked pork into slices. Once you have everything prepared, cut potatoes and eggs into slices and you can start putting everything into baking tray or pot. First layer is layer of potatoes, followed by layer of eggs and layer of salami. Keep repeating those layers until you do not have anything left. When done, preheat the oven to 180 degrees and left 4 eggs mix with cream in bowl together salt and pepper. Then poor the mixture over the top of potatoes. At the end… cover the top layer with cheese according to your taste, put it into the oven and bake until is egg nicely done.

      Well… hopefully, you are hungry so you can serve. If you fancy – with pickles (my favourite) or any kind of vegetable salad or just tomato 🙂

    • Chiles en Nogada — Mexican Food Journal

      I have gone through some pictures and memories over the weekend as I am trying to put everything on place in new home (and it takes so much time 😀 ) and I came across pictures from 2 years ago when I was pregnant and we went for summer holiday to Mexico. By the way, not that great idea when you are in third trimester and it is hot as hell 😀 However, we went and food was amazing… I could not eat anything spicy at that time, I simply hated it… so… I tried this delicious dish “Chiles en Nogada”. It is very different and I would have never said that it is Mexican dish, but here it is…

      I have tried it, the combination of tastes was different and very interesting, but to be honest… I would not go for it again. However, I will – as I was pregnant and my senses could have been influenced by our little growing monkey at that time 🙂

      If you have opportunity to try this dish… give it a go. It is completely different! My mum in law loves it ❤
