One pot gnocchi

Just before we moved to new place, I tried to “get rid of” things as much as I could. It meant as well to clean the fridge, so many one pot dishes were done! πŸ™‚ And one of these one pot dishes were one pot gnocchi and almost the last dish in our “old” apartment! Nothings special, but worth trying. Have a look!


What do you need:Β 

300 g gnocchi (homemade or bought one)

olive oilΒ 


1 medium courgette

handful of spinach


300 g bacon

4 spring onions

lemon zestΒ 


125 ml lactose free creamΒ 

Parmesan cheese

handful of green mixed leaves (according to you taste)

salt and pepper



This dish is very quick and easy to prepare. You just need a big pan or pot. When you have it, add a bit of olive oil and fry courgette, bacon and chilli together. When ready, nice and golden, add spinach leaves, spring onions, lemon zest and Mascarpone. In other pot, boil shortly gnocchi. When almost ready, add them into the pan with bacon, together with a bit of cooking water. Mix everything until smooth and add lactose free cream, salt and pepper. Let it simmer for couple of minutes and you can serve with Parmesan cheese on top and mixed leaves. I have picked this time only basil leaves, as our fridge did not have many things to offer anymore and I have basil at home πŸ™‚
