Almost the end of the week and I am just thinking that time flies so fast. I am enjoying my new job a lot. Right now, I am adjusting new testing lab. It is lot of work, many times really hard work, but makes me feel happy, relaxed and looking forward to come home and spend time with my beloved ones. However sometimes I wish I could spend more time with them… When I am spending time in kitchen I want to give them the best what I can. And to be honest, this casserole has gone very well and mainly my little monkey, he loves it a lot (as I made one version for toddlers) π
What do you need:Β
750 g chicken breasts
1 onion
4 garlic cloves
4 potatoesΒ
2 carrots
1 parsnip
1 cup red lentils (I have mixed couple of types as I had small amount of each)
2 tbsp curry paste (according to your taste)
1 vegetable stock
sunflower oil
fresh parsley
Additionally:Β
Greek yogurt
basilΒ
salt and pepperΒ
bread
Take a large pan, add oil and heat it up together with chopped onion and crushed garlic cloves until a bit softer. Afterwards, add cut chicken breasts spiced with salt and pepper and fry it until done. Add cut potatoes, carrots and parsnip and cook until golden.Β Stir in the curry paste, pour in the vegetable stock and bring it to boil. When boiling, reduce the heat and add lentils, cover the pan and simmer for approximately 20 minutes or until the lentils are done.
In the mean time, you can prepare yogurt dip. Cut finely basil leaves, add them into the yogurt together with salt and pepper. And when is your casserole ready, you can serve it together with it and bread.
I prepared as well version for babies. Exactly the same ingredients, however I did not use curry sauce and vegetable stock or any other spices. Instead, I used “Mild Korma Cooking sauce” which you can find here for babies older than 1 year π And to be honest… our little one just loved it!
