One of these snowy days, I went home and I was thinking about dinner… as every day when I go home. Something comforting and easy… so pasta Alfredo crossed my mind.
What do you need:
500 g tagliatelle (Spinach or mixed)
250 g double cream
25 g butter
4 garlic cloves
1 tsp corn flour
100 g Parmesan
200 g Cheddar (or any other you prefer)
In a big saucepan, fry crushed garlic cloves with butter and afterwards stir the clotted cream, butter and cornflour over a low heat and bring to a low simmer. Turn off the heat and keep warm. In the mean time, grate cheese, put it in bowl together with nutmeg and add a good grinding of black pepper, then stir everything together. Boil pasta in big pot. When cooked, scoop some of the cooking water into a saucepan and drain pasta. Add pasta into the pan afterwards and mix it properly with finely chopped parsley. And… you are ready to serve with sprinkled Parmesan!
