Not that long time ago, I have found this nice recipe and I gave it a go. It was big success at home 🙂 Even our aupair likes it… and that means something 😛 😀 And my husband… he at least feels a bit of Mexico in his home as sometimes it is not easy to be far from home. No matter how long have you been living abroad, there are days when you miss where you grew up. So please, if you want to try something really good, check the link below of follow recipe mentioned below as I have adjusted it based on what my kitchen offered.
What do you need:
750 g chicken
2 cups rice
1 tsp paprika powder
salt and pepper
8 – 10 tomatoes
4 garlic cloves
handful of green peas
handful of fresh parsley
Firstly, prepare rice as you like it – on stove or in the oven, whatever you like. In the mean time, cut chicken breasts into small pieces and season them with sweet paprika powder, salt and pepper. In the big pot, heat up oil, put seasoned chicken breasts and cook it until slightly golden. Afterwards, add diced potatoes, peppers and courgette.
Heat up other pan (without oil) and put tomatoes, onion cut in halves and garlic cloves. Roast everything until slightly burned and then blend everything together with vegetable stock. Add blended salsa into the pot with chicken and vegetables, stir it properly and add green peas with finely chopped parsley. Keep cooking until everything is soft and tender and then your dish is ready.
Enjoy! You can serve additionally with avocado, tomatoes, bread or tortilla aside 🙂
