My yesterday’s journey home was not the best and I did not prepare “Mexican mole” for my husband as he wished, unfortunately. (However it is on the list for the weekend 🙂 ). But I wanted to have warm dinner. As usual during working days – something easy and quick. So I picked baked macaroni and cheese. Always quick option when I run out of ideas and time. I am sure, you can find huge amount of recipes, but I like the classical mac&cheese with crunchy topping.
What do you need:
500 g macaroni
250 g mozzarella cheese
150 g Cheddar cheese
125 ml lactose free cream
250 ml milk
1 tsp mustard
Firstly, start with boiling water for macaroni in big pot. Firstly, take approximately 1 cup of breadcrumbs and put in the bowl. Heat up butter on pan and when melted, pour it into the breadcrumbs and mix it properly together.
Afterwards, while preparing pasta, take a pan for cheese sauce preparation. Add 2 spoons of flour together with butter or oil and fry it. However, stir it constantly so it does not get burn. Add lactose free cream and milk and heat it up. Afterwards, add grated cheese – I used mozzarella together with Cheddar cheese, but you can use whichever you like. Add salt, garlic powder, spoon of mustard and onion powder and keep stirring until thicker. Add your drained macaroni into the baking tray and when cheese sauce ready, pour it on top and mix it together. To finalize, spread bread crumbs on top of macaroni and put it into the preheat oven (180 degrees). Bake it approximately 25 minutes. And… you can serve afterwards! 🙂
