New week again! Hopefully, you have had great start of the week as I have. We had really nice weekend, however very cold and with snow (!) again and spring is still somewhere hidden 🙂 And I love weekends. I love being with my family, but selfishly… I love mornings. My husband prepares every weekend breakfasts! And I love it… being a bit spoiled. We tend to have Mexican style mornings and yesterday was not different. My husband made potatoes with egg for breakfast with cheesy quesadilla and I made refried beans.
What do you need:
1 green pepper
mix of salami (ham, German salami, bacon – whatever you fancy)
salt and pepper
hot chilli powder
refried beans – canned or prepared from scratch
cheese (according to your taste, we like Cheddar cheese)
You can start with preparation of refried beans. I tend to have cooked beans in the fridge so whenever needed, I can prepare beans straight away. If you want to prepare beans at home, please check the recipe here or canned ones are pretty good as well 🙂
Afterwards, take all ingredients and cut them into smaller pieces (my husband likes to use vegetable chopper). Heat up the big pan with oil and put firstly salami, followed by potatoes. Fry it until medium soft and add chopped peppers and tomatoes. Add approximately cup of water and let it boil. You can let it boil until done and eat potatoes without fried egg. However, I really like the egg addition. So… once you pour water, let it boil for 2 – 3 minutes and add eggs. Then, let it cook until you like the egg (I like it runny 🙂 ). In the mean time, you can prepare your refried beans. If you have them ready as I do, just take a pan with oil and heat it up. Put beans with its water as well and let it cook. When boiling, mash all beans together. You can add cheese or Mexican chorizo as well and let it cook. Do not forget to stir beans, otherwise it will get burnt.
When all ready… you can make cheese quesadillas and you can enjoy this Mexican style breakfast. Delicious!
