Couple of days I have not been able to shown up here, unfortunately. I fell from stairs and luckily, not much happened. While my husband was bathing our little one, I somehow slipped and ended up with pain in my head, wanting to throw up and awful pain everywhere and scared face of our aupair was in front of me. Well, I scared everyone in house, including the little one and myself. So I stayed for a while in bed as my head feels like it is not mine and I am wondering when my bruises will disappear and will not look like colourful poster 😀 Sooo… something easy to be prepared – one pot dish. I have picked salmon with vegetables and mashed potatoes.
What do you need:
6 – 8 pieces of salmon
4 corn cobs
mixed vegetables – according to your taste
mixed spices – sweet paprika, onion, garlic, mustard seeds
potatoes (I always go with 2 potatoes per person)
1 vegetable stock
slat and pepper
One pot dishes – I love them. Easy, quick and do not need to do really much. Mainly when you do not feel very well. Simply comforting food. And salmon… I love fish and salmon is so delicious. Firstly, pick vegetables you really like. I have gone with corn cobs, carrots, broccoli and corn. If you do not like salmon, you can go with other type of fish or even chicken. Preheat the oven to 180 degrees and take a big pot. Add a bit of vegetable oil, mixture of vegetables and season salmon with mixed spices (I have mixture of sweet paprika, dry onion and garlic, mustard seeds). Add into the pot. When done, put a vegetable stock in cup and mix it with hot water and pour into the pot. Cover and put into the oven for approximately 20 minutes. In the mean time, peel potatoes, cook and prepare mashed potatoes with butter.
