Friday again. My days are flying very fast, to be honest. I am having lot of projects at work and I am totally “in love with them” and enjoying my work a lot 🙂 And therefore still behind with posts and catching up after holiday. As weekend is coming, I want to share with you breakfast inspiration which my husband prepared last week. I am spoiled every weekend with his breakfasts and cooking skills ❤ This time he prepared “muffins” – not sweet ones at all.
What do you need:
piece of spicy chorizo
cheese – whichever you prefer (he has gone for grated mozzarella and Cheddar cheese on top)
salt a pepper
pinch of hot chilli powder
additionally: refried beans, avocado and tortillas
Firstly, peel potatoes, grate them coarsely and season them with salt, pepper and hot chilli powder. Afterwards, chop tomatoes, ham and chorizo. If you have cheese grated, just have it ready. If not, grate your cheese. Take a muffin baking trays and you can start preparing your breakfast 🙂 My husband he has prepared two types. First one: put layer of grated potatoes, followed by layer of tomatoes mixed with ham and chorizo, topped with egg and ham. Second one: layer of grated potatoes, grated cheese mixed with tomatoes, egg on top with layer of cheese. You can prepare those muffins with whatever you like basically! Afterwards, put oiled baking trays into the preheat oven (175 degrees) and bake until are potatoes done, approximately 20 – 25 minutes. Then just enjoy delicious breakfast muffins, served with tortilla, refried beans and avocado aside.
