Breakfast time! We could not sleep today very well as the weather has been very nice here, however houses in UK and their insulation… well… could be simply better, put it that way 😀 So, we had breakfast together today and my husband prepared avocado sandwiches with Benedict egg. I am sure, I have already shared with you something similar as it is one of our favourite breakfasts and you can definitely find many variations on internet. However this time, my husband did Benedict eggs (most of the time I do them) and he does it completely differently than me. We have as well “juicing – light eating” month, so we have chosen gluten free bread. And for seasoning – Peri – Peri powder and I have received it as a gift from my amazing friend! 🙂 Thank you very much, Caroline! ❤ So… Let’s have a look.
What do you need:
gluten free bread or whichever you prefer
1 avocado per sandwich
egg per sandwich
salt, pepper, spicy chilli powder (Peri – Peri)
Simple, quick and easy start of the day! Warm up a bit your sandwich / bread or whatever have you picked. Take a bowl, place a kitchen foil in it, egg and season it with salt, pepper and spicy seasoning powder. Prepare pot with boiling water. Once boiling, reduce heat, wrap kitchen foil with egg tightly and place it into the boiling water. Boil it approximately 2 – 3 minutes. In the mean time, spread avocado on top of bread, season it with salt, place lettuce and tomatoes and egg on top.
