One pot dish again. Yes, comforting! Easy, quick and great when having running toddler around 🙂 I love tortellini and this time I did not prepare them by myself, so I bought ricotta – spinach ones. Suddenly, I feel much more energetic as sun is here often and often. And I have started my gym and exercises regularly so one pot dishes are great for that.
What do you need:Â
750 g chicken breasts
6 garlic cloves
sweet paprika powder
3 cups of baby spinach
6 tomatoesÂ
chicken broth / vegetable stock
250 ml double cream or lactose free cream
500 g tortellini according to your taste
salt and pepper

Firstly, cook your tortellini as the instructions suggest. When ready, drain them and put them aside. In the mean time, start with chicken breasts preparation. I like smaller pieces, so you can cut your chicken breast in smaller pieces and season it with sweet paprika powder, salt and pepper. Fry it in the bigger pan together with oil for couple of minutes. When ready and done, take it out and put it aside. Add spinach, crushed garlic cloves and chopped tomatoes into the pan. Fry it for couple of minutes, until is garlic nicely smelling in your kitchen and spinach is wilted. Put chicken breasts back, add chicken broth or vegetable stock with water and cook it for next 10 minutes. Afterwards, add cream and stir another 5 minutes or until liquid is slightly reduced. At the end, add tortellini into the pan. Cook it couple of minutes to heat up tortellini. And… serve 🙂
