Finally, I have started to go to gym regularly and enjoying myself as before all changes happened 🙂 To be fair, I am really enjoying it, but at the same time I am very tired and my days are just flying. I wake up and suddenly it is night and I just want to sleep 😀 I tend to go to gym now in the evenings, when my little one is already asleep so I won’t miss time with him and I have decided that days that I am not going to cook – we are having just salads or sandwich. However this time, my husband was just hungry 😀 and when I came home we actually had a warm dinner. Fish.
What do you need:
6 pieces of fish (according to your taste – our was haddock)
1 cup of rice
4 garlic cloves
avocado and tortilla (optional)
Very simple way how to prepare fish. Firstly, take a pan and fry tomatoes, onion and 2 garlic cloves together. Fry it without oil, until slightly burnt. Afterwards, blend it all together with vegetable stock added to blender. Pour blended salsa back to the pan and cook it until a bit thicker. In the mean time, take a baking tray and put pieces of fish in. Preheat the oven to 200 degrees. When is salsa a bit thicker, pour it on top of pieces of fish, add crushed 2 garlic cloves, olives and stir everything together. When ready, put the tray into the preheat oven and bake approximately 20 minutes. In the mean time, prepare rice. Take a pan, add oil, fry briefly rice and add cup of water and let it boil until soft. And… you can find it in your plate, served with avocado and tortilla aside 🙂
