Salads for dinner. I love it and my husband as well. However, our aupair is not that big fan of vegetables and salads 😀 So unfortunately, I kind of stopped preparing salads for a while. But.. I am back as my husband really miss it. So… this time,quickly after my gym, I prepared very simple rice salad.
What do you need:
1 cup rice
couple of pieces of ham and salami (whichever you like or chorizo)
1 can of sweet corn
200 g green beans
300 g broccoli
350 g asparagus
handful of mushrooms
1 vegetable stock
pepper or chilli powder
Niva cheese or any type of Blue cheese
additionally: tomato, avocado, tortilla
Firstly, peel and chop all vegetables which are you going to use and together with that cut ham and salami as well. Once ready, steam broccoli and asparagus in steam cooker (approximately 15 minutes) or separately in stove. In the mean time, take a big pan, add oil and ham with salami. Fry it for couple of minutes. Afterwards, add the rest of vegetables and fry them until soft. Add cup of rice, stir it properly and add 2 cups of water together with vegetable stock. Let it cook until is rice soft. Season it with salt (if needed), pepper or chilli powder. To finalize, add 3 eggs and stir them into the rice and wait until properly cook. And you can serve everything together and additionally, you can top your rice salad with Niva cheese (which is Czech type of Blue cheese), avocado and tomato aside.
