I have not prepared quinoa for quite some time so when I was thinking about salad, quinoa was good choice. And I really do like a bulgur, so why not to have a mix. Very quick and easy dinner with lot of nutrients. And even first weird looks and first words “it does not look very appealing” from our aupair, she loved it at the end 😀

Grown in South America (Peru, Chile and Bolivia) for thousands of years, quinoa formed the staple diet of the Incas and their descendants. In recent years, foodies in the UK and the US have heralded it as a superior alternative to bulgur wheat, couscous and rice. Though it often occupies a similar role to these grains in dishes, quinoa is actually a seed from the same family as beets, chard and spinach.
What do you need:
250 g quinoa
2 cans of tuna
4 – 6 tomatoes
1 vegetable stock
mixed green leaves – basil, baby spinach, rocket leaves
black sesame seeds
This salad is very simple, however one of our favourite ones. We simply love quinoa and I really love bulgur. So, take a bigger pan, add a bit of oil and quinoa with bulgur. Stir everything together and you can start cooking with addition of water and vegetable stock. I usually put 1 cup more of water than I have all grains. So basically, with 2 cups of grains I tend to add 3 cups of water and cook it until done in medium heat. Addition of vegetable stock will bring nice flavour and you do not need any additional salt or seasoning. Unless you prefer something spicy like my husband. In the mean time, cut tomatoes and avocados. When are seeds cooked, turn off the heat, add tomatoes and avocados and mix everything together. You can serve with mixed green leaves, topped with Feta or Blue cheese (I used Czech Blue cheese called Niva), black sesame seeds and squeezed lime juice. Delicious end of the day!
