Weekend almost here and in the UK we have longer weekend as Monday is bank holiday 🙂 Exciting. And hopefully, weather is going to be as well good and not full of rain. Yesterday, after many concrete mixes, I was craving potatoes… and mainly – proper Spanish tortilla. Before we moved, we went from time to time to Spanish restaurant and I tend to order one every single time we were there. And I do not know, I have never tried to prepare it at home. However this time, my first homemade tortilla espanola has been done. Like proper proper one 🙂 I asked our aupair if she can ask her mum about her secrets with this dish, so… Here it is!!
What do you need for medium sized, fluffy tortilla:
6 big potatoes
4 – 6 onions
Spanish chorizo
8 – 10 eggs
1/2 tsp baking powder or yeast
salt and pepper
oil
Additionally: tomatoes
Firstly, peel your potatoes. If you do not have big ones as I did not have as well, you can use 3 small potatoes as 1 big one. When you peel potatoes, cut them into smaller pieces. I cut them into cubes, however next time, I will slice them or cut them even finer. When done, you can start frying them in the pan with enough oil. Let them cook until medium done (with medium heat). In the mean time, peel and finely chop onions. Take another pan with oil and start frying onions until nicely glassy, but not burnt. When you have potatoes and onions ready, drain them so not much oil remains. Afterwards, take a big bowl and put all eggs in, whisk them with baking powder or yeast and salt. Then put onion, potatoes and small pieces of chorizo and mix everything properly together. In the medium size pan, heat up oil (you can use the drained one) and pour mixture into the pan. Fry everything in small heat. Try to prevent burning in edges with wooden spoon and slightly shaking with pan. Cook approximately 5 – 8 minutes from one side. Afterwards, flip tortilla with help of plate and cook the other side next 5 – 8 minutes. And… then… just enjoy your tortilla espanola!! ❤ My first one was delicious and I am definitely going to prepare next time other one. Favourite ones are for example just with onions, or with addition of spinach or pepper 🙂 Pick your favourite one!

That looks wonderful. I keep meaning to learn more about cooking with chorizo. I see in every grocery store in Florida but I have never learned how to work with it. I think I will make that a summer mission.

Estoy segura que te harás una experta haciendo tortillas. Yo hago una todos los jueves para cenar. A mí marido le gustan mucho.
Por cierto que tenemos una hija viviendo en Inglaterra con su familia desde hace muchos años. Tenemos dos nietos ingleses (nacidos ahí) a los que también les gusta mucho la tortilla, además de las albóndigas de bacalao y la paella.
Dentro de tres semanas nos vamos a pasar un par de semanas con ellos. Siempre aprovecho para comer auténtico Roast Beef, Scones, Fish and chips, y un largo etc. de comida inglesa.
Ellos viven en la zona de Bristol.
Cualquier cosa en la que te pueda ayudar me dices.

Creo que WelWelwyn Garden City está en Hertfordshire, a una hora de Cambridge. La verdad es que soy una enamorada de Inglaterra y su cultura. Bueno, de hecho estudié Filología Inglesa en la Universidad de Valencia (hace ya muchos años). Tenemos a una hija viviendo en Chipping Sodbury, cerca de Bath y cuando voy tengo la sensación de que en otra vida yo he vivido en Inglaterra en otra época. Dentro de 3 semanas vamos a pasar 10 días en Chipping. ¡Qué ganas tengo!!

Delicious looking. I’ve only tried making it once … too few ingredients in too large a pan (I don’t have a smaller one and was short of potatoes) so I ended up with a very thin tortilla. It was tasty, at least. 🙂
