As I am backing to routine with empty house, I am trying to get rid of all leftovers… Bits and bobs around 🙂 So, I have chosen to prepare spaghetti with pork which was I do not even remember what kind of occasion or dish and i still have courgette in my fridge which my mum gave me when leaving from our holiday in Czech Republic. I am huge fan of courgette and my little one as well… So, let’s have a look what you need for this incredibly speedy spaghetti from leftovers and I would say even in budget – friendly, high in fibre and extra tasty! 🙂
What do you need:
500 g spaghetti (I had in fridge ready ones as I prepared of the days spaghetti bolognesa with too much spaghetti)
1 medium / large size courgette
extra virgin olive oil
350 g pork meat (loin, shoulder or even bacon if you fancy)
1 red bell pepper
pinch of chilli powder
1/2 cup lactose free cream
If you do not have ready spaghetti as I did, start with their preparation first. Afterwards, take a big pan (for example Wok pan), add olive oil and sliced meat. I had in my fridge couple of done pieces of pork loin, I sliced them and fry them in the pan. Add teaspoon of turmeric and pinch of chilli powder. In the mean time, when meat is getting ready, chop pepper and add it into the pan. Afterwards, finely slice courgette and add it into the pan as well. Cook approximately 10 minutes. If you are preparing spaghetti together with meat, add 1 scoop of water from spaghetti into the meat. Afterwards, drain your pasta and mix it together with meat and vegetables. At the end, add cream and simmer it for 5 – 7 minutes. Season it at the end with salt or pepper if you wish and sprinkle with fresh parsley and Feta cheese.
